Truffle Mac and Cheese

Baked Mac and Cheese

{  Ingredients : 1~2 single servings }

  • 2 cups elbow pasta
  • 1 cup broccoli, cut into florets (optional)
  • 2 tablespoons butter
  • 1 Cup bread crumbs, preferably panko
  • 2 Tbs flour
  • 1 Cup milk
  • 1/2 Cup Cheddar Cheese
  • 1/2 Cup Romano Cheese
  • 4 Tbs black truffle oil
  • Freshly ground black pepper
  • Salt

1. Add elbow pasta to boiling water and cook until it’s right before al dente; about 7 minutes.

2. Add broccoli to boiling pasta water for 1 min. Drain pasta and broccoli.

Mixture

3. Add 4Tbs black truffle oil to drained pasta and broccoli and mix it in . Set it aside.

4. Melt 2 Tbs butter in a saute pan and add 1 Tbs flour. Toss until turns golden and add 1 Cup milk and whisk.

5. Add all cheese in small chunks and whisk until cheese is melted. Season with salt and pepper.

6. Mix 5 into 3 in a mixing bowl with 2/3 Cup breadcrumbs.

7. Heat the oven to 350F.

8.  Pour the mixture into Ramekin and sprinkle rest of breadcrumb on the top.

9. Bake until breadcrumb turns golden.
